Owner Drew Shader wanted to bring biscuits to Denver, and that’s exactly what he did. He opened Biscuit Bus, the first gourmet food truck in Denver, according to the DBC website. Then, following the truck’s success, Shader opened up Denver Biscuit Company in the back of his bar, The Atomic Cowboy.
Everything on the menu at DBC is tempting, to say the least. Start your morning with one of ten different biscuit sandwiches! The DBC Club features buttermilk fried chicken, bacon, and chipotle ranch, and The Dahlia is served with sausage, apple butter, an egg, and syrup. If your ideal meal includes biscuits and BBQ, order The Elmer, a sandwich piled high with pulled pork, onion rings, pickles, and coleslaw. It’s not hard to see why Denver Biscuit Company has such a favorable reputation with the foodie crowd.
Of course, they serve more than sandwiches. Hefty biscuit platters like the Three Run Double, french toast, and shrimp and grits are all on the menu. You don’t want to skip the biscuit cinnamon roll, either (order it with bacon!) With just one bite, you might think you’re at a brunch spot in the South.
Wash down your breakfast with a hot or iced coffee from Denver’s own Boxcar Coffee Roasters, or treat yourself to a mimosa or any of the beverages from The Atomic Cowboy’s bar.
